‘A good knife depends on both the materials and the craftsman,’ says Soichi Hirano, the fifth generation owner. While Hontei Kanezou offers knives made from both steel and stainless steel, handling becomes more challenging as the quality of the material increases. Techniques such as forging, cooling, and tempering are crucial. Without skilled artisans to bring out these qualities, the highest quality cannot be achieved. Particularly exceptional is the sharpness of steel knives, though rigorous maintenance is essential to prevent rust. ‘Surface rust can be polished, but once it penetrates deep, it becomes difficult,’ explains Hirano. Currently, VG10 stainless steel is popular for its sharpness comparable to carbon steel and resistance to rust. Matching the finest blades, great attention is given to the handles, featuring classics like magnolia for Japanese knives and mahogany for Western knives. Gripping these handles reveals their surprising lightness and excellent balance. The sensation of effortlessly cutting through ingredients in harmony with the blade’s sharpness transforms the concept of knives.

At Hontei Kanezou, knives are expertly sharpened upon purchase to achieve peak performance. ‘About 1 in 200 knives may have uneven tempering or flaws, which we discern during sharpening. If any discrepancy is noticed, we gladly exchange it,’ says Hirano. This commitment to quality ensures high customer satisfaction, extending their reputation worldwide. Overseas chefs regularly purchase and maintain these knives, while a French investor buys over 20 knives annually.
